rethermalize product for menu/volume savings.
Pitco's unit meets the following cooking parameters:-
When in operating mode (195°), the unit will raise
40 lbs. of product (8-5 lb. food bags)
from
a start temperature of 37°-40°,
to a finish temperature of 165° within 30 minutes. 
-Heat up time from a cold start is approximately 30-40 minutes, or
less.
